• 1/4 tsp saffron threads
• 1 tsp rosewater
• 8 egg yolks

1. Heat the cream and milk in a medium saucepan over medium heat until just beginning to steam.
2. Soak the saffron threads in 1 tablespoon of warm water for about 10 minutes.
3. In a separate bowl, whisk the egg yolks and sugar together until the mixture is pale and thick.
4. Gradually pour the hot cream mixture into the egg yolk mixture, whisking continuously to prevent the yolks from curdling.
5. Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
6. Remove the pan from heat and stir in the saffron water and rosewater.
7. Strain the mixture through a fine-mesh sieve into a clean container and refrigerate until completely chilled, preferably overnight.
8. Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions.
9. Transfer the churned ice cream to an airtight container and freeze for at least 2 hours before serving
