Ingredients:

• 4 boneless, skinless chicken breasts

• Salt and pepper

• 1 tsp saffron threads

• 1/4 cup of warm water

• 2 tbsp vegetable oil

• 1 onion, chopped

• 2 cloves of garlic, minced

• 1 tbsp grated ginger

• 1 cup of chicken broth

• 1/4 cup of plain yogurt

• 2 tbsp of chopped fresh cilantro

Instructions

1. Soak saffron threads in 1/4 cup of warm water for 10 minutes.

2. Preheat the oven to 350°F (175°C).

3. Season chicken breasts with salt and pepper; set aside.

4. Heat vegetable oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown, then remove and set aside.

5. In the same skillet, sauté onion, garlic, and ginger for 3-4 minutes until softened and fragrant.

6. Add chicken broth, saffron water, and yogurt, bringing the mixture to a simmer.

7. Return the chicken to the skillet, spooning the sauce over it.

8. Transfer the skillet to the oven and bake for 20-25 minutes, until the chicken is fully cooked.

9. Remove the skillet from the oven and let it sit for a few minutes before serving.

10. Garnish with fresh cilantro before serving.
