Saffron Aioli
• Fresh Garlic Clover or 1 TSP Jarred Minced Garlic
• 2 Egg Yolks
• 1 Tsp Lemon Juice
• 1/3 Cup Olive Oil (or More As Needed)
1 TBSP Hot Water
1. Gently crush a pinch of saffron into a small dish with hot water and set aside.
2. Add the ingredients to a small food processor and blend on low until creamy. You can add more oil as needed to thicken the sauce. Refrigerate until needed.
3. Pat dry the calamari rings then season with salt and pepper to taste. Add flour and throughly mix until everything is coated.
4. In a skillet add enough oil to cover the bottom of the pan. Heat to medium.
5. Add the calamari rings and cook to golden brown on both sides. You may need to cook in batches to not over crowd the pan.
6. Serve on your favorite bread rolls with the aioli and lemon wedges.
