Ingredient Notes

(Here’s what you’ll need for 2 servings. Find the full recipe at the bottom of the post.)

Saffron Threads: Use about 24 threads of high-quality saffron. Ideally our real Afghan saffron, known for its deep color, sweet aroma and high potency that give you all the full sleep benefits saffron has to offer. Cardamom Pods: Use 4 green cardamom pods. Crush them to release their sweet, floral aroma.

Black Peppercorns: Just 8 black peppercorns will add a touch of warmth without overpowering and help your body absorb saffron’s beneficial compounds more effectively.

Milk: Use 1 cup of milk of your choice, whole milk for richness, or almond/oat milk for a dairy-free version.

Maple Syrup: Use 1 teaspoon for a soft, natural sweetness that blends beautifully with cardamom. Honey also works, but maple syrup gives that cozy, caramel-like flavor.

Salt: A tiny, tiny pinch, barely a grain. It brings out the sweetness and rounds out all the flavors to really elevate this drink.

Here’s our step-by-step video of how we make this comforting Saffron Cardamom Milk at Heray, from blooming the saffron to that golden pour.

Step 1: Bloom the Saffron

In a small mortar and pestle, grind 24 saffron threads together with a tiny, tiny pinch of salt until fine.

Add 1 tablespoon of warm milk (around 70–80 °C, not boiling to preserve the healthy compounds saffron has to offer), stir gently, and let sit for 5–10 minutes to bloom.

You’ll see the milk slwoly turn beautifully golden.

Step 2: Crush the Spices

In the same mortar (or separately), crush 4 green cardamom pods and 8 black peppercorns.

Step 3: Warm the Milk

In a small saucepan (or microwave), heat 1 cup of milk over medium-low heat. Add the crushed cardamom and pepper.

Let it gently warm for 3–4 minutes, never boil, stirring occasionally to further infuse the flavors.

Step 4: Combine and Sweeten

Remove from heat.

Strain out the spices if desired (optional for a smoother texture), then stir in the bloomed saffron and 1 teaspoon of maple syrup.

Mix until the milk takes on that golden hue and a fragrant aroma fills the air.

Step 5: Serve

Pour into your favorite cup. Sip slowly.

You’ll taste the warmth of cardamom and pepper first, followed by the sweetness and floral aftertase of saffron.

It’s the perfect drink to unwind at night.

Notes

- Quality matters: Use high-quality Afghan saffron. Genuine threads should release color slowly and smell floral, not musty. Learn why Afghan saffron was crowned World's Best by the International Taste Instute for the 9th consecutive year in our article here.

- Don’t boil saffron: Boiling destroys its aroma and beneficial compounds.

- Optional topping: Sprinkle a few whole saffron threads or a little cinnamon on top for a luxurious finish.
