Saffron Rosewater Pistachio Ice Cream (Bastani Zafrani)

Here is a recipe for Saffron Pistachio Rosewater Ice Cream, also known as Bastani Zafrani. This creamy and fragrant dessert is a popular treat in Iran, Afghanistan, and other parts of the Middle East.

Ingredients:

    • 2 cups heavy cream
    • 1 cup whole milk
    • 3/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 1/2 teaspoon saffron threads
  • 1/4 cup warm milk
  • 1/2 cup unsalted pistachios, chopped
  • 1 tablespoon rosewater
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. In a medium-sized saucepan, combine the heavy cream, whole milk, sugar, and salt. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
  2. While the cream mixture is heating up, grind the saffron threads into a fine powder using a mortar and pestle. Add the saffron to the warm milk and stir until it dissolves.
  3. Once the cream mixture is hot, remove it from the heat and stir in the saffron milk, chopped pistachios, rosewater, and vanilla extract.
  4. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours, or until thoroughly chilled.
  5. Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, until it reaches a soft-serve consistency.
  6. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours, or until firm.
  7. Serve the ice cream garnished with additional chopped pistachios and a sprinkle of saffron threads, if desired.
