Flour: 1 cup of self-rising flour gives the flatbread structure. Alternatively, use regular flour with 1 tsp baking powder.
Greek Yogurt: ¾ cup of Greek full fat yogurt adds tenderness and a gentle tang, making it into a soft dough.
Salt: 1 tsp balances the richness and enhances every spice note.

Step 2: Bring the dough together
In a bowl, combine flour, yogurt, turmeric, salt, and the saffron water. Stir until it gathers into a soft, fragrant dough.
Turn the dough onto a floured surface and knead for about five minutes, until smooth and elastic. Add flour only as needed.
Rest the dough in a lightly floured bowl for +- 10 minutes. This short pause relaxes the gluten, making rolling effortless.
Step 4: Pan-fry to golden.
Heat olive oil over medium heat. Fry each flatbread 1-2 minutes per side until golden and blistered, adding a splash of oil between each batch.
Step 5: Serve

Ingredients
- ¾ cup Greek yogurt
- 1 cup self-rising flour (or 1 cup all-purpose flour + 1 tsp baking powder)
- 1 tsp salt
- Olive oil, for frying
Instructions
1. Bloom saffron: Grind saffron threads with a mortar and pestle. Add 1 tbsp of 70-80 °C water and let bloom 10 minutes.
2. Bring the dough together: Mix flour, yogurt, turmeric, salt, and saffron water into a dough. Knead 5 minutes on a floured surface. Rest dough 10 minutes.
3. Shape into Flatbreads: Divide into 6 pieces and roll into balls. Roll each into a thin circle.
4. Pan-fry to golden: Fry in olive oil over medium heat, 1-2 minutes per side.

Notes

- Don’t boil saffron: Boiling destroys its aroma and beneficial compounds.
- Don't add sugar too soon: Only add the sugar towards the end, otherwise the boiling step takes way longer.
