1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, sautéing for 3-4 minutes until softened and fragrant.

4. Stir in the crushed tomatoes, broth, saffron water, salt, and pepper into the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
5. Remove the pot from heat and allow the soup to cool slightly.
6. Puree the soup using an immersion blender, or carefully transfer it to a blender and blend until smooth.
7. Return the pureed soup to the pot and reheat gently.
8. For a creamier texture, stir in heavy cream if desired.
9. Serve the soup hot and garnish with chopped parsley if desired.
