Chicken with Saffron Cream Sauce

Saffron and Peach Sorbet

Ingredients:

• 2 cups of peeled and sliced fresh peaches

• 1/2 cup of sugar

• 1/4 cup of water

• 1/4 teaspoon of saffron threads

• 1/4 teaspoon of lemon juice

• pinch of salt

Instructions

 1. In a small saucepan, combine the sugar and water. Heat over medium heat until the mixture reaches a simmer. Add the saffron threads, lemon juice, and a pinch of salt. Stir continuously until the sugar is completely dissolved and the saffron is well integrated into the syrup. Remove from heat and allow the syrup to cool completely before using.

2. In a blender, puree the peaches until smooth. Add the cooled saffron syrup to the pureed peaches and blend again until well combined.

3. Transfer the mixture into a container and place it in the freezer. Every 30 minutes, use a fork to scrape the frozen edges and incorporate them into the centre, ensuring a smooth texture. Continue this process for 2-3 hours, or until the sorbet is frozen and attains a smooth consistency.

4. Once the sorbet has fully frozen, remove it from the freezer and allow it to sit at room temperature for approximately 10 minutes. This will make it easier to scoop.

5. Serve the saffron and peach sorbet in bowls or cones and enjoy right away!
