Ingredients:

• 1 cup plain yogurt

• 2 tbsp chopped mint leaves

• 1/4 tsp saffron threads

• 1/4 cup warm water

• 1/4 tsp salt

• 1/4 tsp black pepper

• 1 clove of garlic, minced (optional)

• Servings: serves 4-6 people depending on serving size

• Prep Time: 10 mins

• Chilling time: 30 mins (in the fridge)

• Total time: 40 mins

Instructions

1. Place a pinch of saffron threads in 1/4 cup of warm water and let them sit for about 10 minutes to bring out the flavour and colour.

2. In a bowl, combine the yogurt, chopped mint, saffron water, salt, pepper, and minced garlic, making sure all the ingredients are well combined.

3. Cover the bowl and pop it in the fridge for at least 30 minutes to allow the flavours to meld.

4. Before serving, take it out of the fridge, stir it up again, and adjust the seasoning if needed.

5. Enjoy with veggies, pita chips, or use it as a sauce for grilled meats!
