Ingredients (Serves ~6)

Base Ingredients:

• 10 pitted dates

• 4 oz alcohol-free rum (or regular rum if preferred)

• 1 tbsp cinnamon (preferably @HeraySpice)

Ice Cream Mixture:

• 2 cups heavy cream

• 1 tbsp cinnamon

• 1 can (14 oz) sweetened condensed milk

• 1 tbsp vanilla bean paste or saffron liquid

Instructions 

1. Soak the Dates:

• Combine the pitted dates with the rum in a small bowl. Let them soak for at least 10 minutes to soften and infuse flavor.


2. Blend the Flavor Base:

• Add the soaked dates (including the rum) and 1 tbsp of cinnamon to a blender or food processor. Blend until smooth and set aside.


3. Whip the Cream:

• In a large mixing bowl, whip the heavy cream with an electric mixer on medium-high speed until soft peaks form.


4. Mix the Ingredients:

• Gently fold in the sweetened condensed milk, 1 tbsp of cinnamon, vanilla bean paste (or saffron liquid), and the blended date mixture. Be careful not to deflate the whipped cream.


5. Freeze the Ice Cream:

• Pour the mixture into a freezer-safe container or loaf pan. Smooth the top with a spatula, cover tightly with plastic wrap or a lid, and freeze for 6–8 hours, or until firm.
