Ingredients:
-1 pound white fish fillets (such as cod or halibut) cut into 2-inch pieces
-1 cup fish or chicken broth
-1/2 cup white wine
-1/4 teaspoon saffron threads
-1 onion, chopped
-2 cloves garlic, minced -1 red bell pepper, chopped
-1 cup cherry tomatoes, halved
-1 cup green beans, trimmed
-1 cup potatoes, peeled and diced
-1/4 cup chopped fresh parsley
-2 tablespoons olive oil -Salt and pepper to taste
