To make saffron buns, you will need the following ingredients:

  • 2 cups of all-purpose flour
  • 1/4 tsp of active dry yeast
  • 1/4 cup of warm water
  • 2 tbsp of sugar
  • 1/4 tsp of salt
  • 2 tbsp of unsalted butter, room temperature
  • 2 egg yolks
  • 1 tsp of ground saffron
  • 1/2 cup of warm whole milk
  • Raisins (optional)
  • Egg wash (1 egg beaten with 1 tsp of water)

Instructions:

  1. Dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large bowl, mix the flour, sugar, and salt.
  3. Add the butter and egg yolks and mix until the mixture resembles coarse crumbs.
  4. Add the saffron to the warm milk and mix it in.
  5. Add the yeast mixture and saffron milk to the bowl and stir to form a dough.
  6. Knead the dough on a floured surface for 10 minutes until it's smooth and elastic.
  7. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  8. Preheat the oven to 400°F (200°C).
  9. Divide the dough into 12 equal pieces and roll each piece into a ball.
  10. Place the balls on a baking sheet lined with parchment paper, cover, and let them rise for another 20 minutes.
  11. Brush the tops of the buns with the egg wash and sprinkle with raisins, if desired.
  12. Bake for 15-20 minutes or until the buns are golden brown.
  13. Remove from the oven and let cool for 5 minutes before serving. Enjoy!
